Preheat oven to 374C
In a dutch oven or roasting pan, sauté for 10 minutes on medium heat:
- 1 leek, chopped (whites only)
- 3 garlic cloves, chopped
- 3 medium carrots, chopped
- 1 cauliflower, cut into 2" diameter florets
Add and stir:
- 2 Tbsp curry powder
- 1 396 ml can of Lite coconut milk
- 1 Tsp crushed chilies
- 1/4 up raisins
- Salt & Pepper to taste
Top with 2-3 Tbsp of dried, unsweetened coconut (saved or flaked) then place covered in preheated oven for 25-30 minutes.
Remove lid and continue to bake for another 5 minutes on 400C.
